Banana oatmeal pancakes [Recipe]

Ingredients

  • 2 ripe bananas
  • 2 eggs
  • 1/2 cup rolled oats
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon vanilla extract

Directions

  • In a blender or food processor, add the ripe bananas, eggs, rolled oats, baking powder, and vanilla extract.
  • Blend the ingredients until you have a smooth batter.
  • Heat a non-stick skillet or griddle over medium heat.
  • Pour about 1/4 cup of the batter onto the skillet for each pancake.
  • Cook the pancakes for about 2-3 minutes until bubbles start to form on the surface.
  • Flip the pancakes and cook for another 1-2 minutes until they are golden brown and cooked through.
