Chickpea Tacos

Ingredients

  • 1 can chickpeas (drained and rinsed)
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 8 small corn tortillas
  • Toppings: avocado, salsa, cilantro, lime juice

Directions

  • Preheat the oven to 400°F (200°C).
  • In a bowl, toss chickpeas with olive oil, chili powder, salt, and pepper.
  • Spread seasoned chickpeas on a baking sheet and roast for 20 minutes, or until crispy.
  • Warm tortillas and fill them with roasted chickpeas.
  • Top with avocado, salsa, cilantro, and a squeeze of lime juice. Enjoy!
