Chickpea Tacos

Ingredients
- 1 can chickpeas (drained and rinsed)
- 1 tbsp olive oil
- 1 tsp chili powder
- 8 small corn tortillas
- Toppings: avocado, salsa, cilantro, lime juice
Directions
- Preheat the oven to 400°F (200°C).
- In a bowl, toss chickpeas with olive oil, chili powder, salt, and pepper.
- Spread seasoned chickpeas on a baking sheet and roast for 20 minutes, or until crispy.
- Warm tortillas and fill them with roasted chickpeas.
- Top with avocado, salsa, cilantro, and a squeeze of lime juice. Enjoy!
