Cranberry oatmeal cookies [Recipe]

Ingredients

  • Rolled oats
  • Whole wheat flour
  • Dried cranberries
  • Honey
  • Coconut oil (melted)
  • Egg
  • Baking soda

Directions

  • Preheat the oven to 350°F (175°C).
  • In a bowl, combine rolled oats, whole wheat flour, dried cranberries, cinnamon (optional) , baking soda, and salt.
  • In a separate bowl, whisk together honey, melted coconut oil, egg, and vanilla extract (optional).
  • Pour the wet ingredients into the dry ingredients and stir until well combined.
  • Drop spoonfuls of the cookie dough onto a baking sheet lined with parchment paper.
  • Flatten the dough slightly with the back of a spoon.
  • Bake for 10-12 minutes or until the edges are golden brown.
  • Allow the cookies to cool on a wire rack before serving.
