Stuffed bell peppers [Recipe]

Ingredients
- 4 large bell peppers (any color you prefer)
- 1 cup cooked quinoa
- 1 cup diced tomatoes (canned or fresh)
- 1 cup cooked black beans (canned, drained, and rinsed)
- 1 cup shredded cheddar cheese (or your favorite cheese)
Directions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes. Rinse the peppers under cold water and pat them dry with a paper towel.
- In a mixing bowl, combine the cooked quinoa, diced tomatoes, and cooked black beans.
- Stuff each bell pepper with the quinoa mixture, pressing it down gently to pack it in.
- Sprinkle shredded cheddar cheese on top of each stuffed pepper.
- Place the stuffed bell peppers in a baking dish and bake in the preheated oven for 20-25 minutes or until the peppers are tender and the cheese is melted and slightly browned.
